Wild Turkey In Sour Cream

Ingredients:

  • wild turkey pieces for six people
  • Flour
  • Salt and pepper
  • 1 pint sour cream
  • 1 onion
  • 1 box sliced mushrooms
  • 1 chopped green or red bell pepper

Instructions:

  • Clean and wash the bird and cut enough meat for six people into 1” square pieces and marinate in buttermilk with added meat tenderizer
  • Wash of the buttermilk and wipe thoroughly
  • Dip in flour and brown gently in butter placed in a frying pan
  • Deglaze the pan with water and place it with the bird in a cooking pot and sprinkle salt & pepper
  • Cover and bake for 3-4 hours at 350 degrees or until tender
  • Add milk as needed to sour cream
  • Sauté the chopped pepper onion in olive oil
  • Add to the sour cream and cover the turkey before serving. Enjoy!

Braised Wild Turkey

Cooking Time: 1 ½ hours

Ingredients:

  • enough wild turkey pieces for six people
  • pheasant, cleaned and quartered
  • 3 tbsp. bacon fat
  • 1 med. onion, cut into pieces
  • 2 stalks celery, chopped
  • 6 small carrots
  • 1 med onion
  • 2 ounces of ham
  • 1 tbsp. sugar
  • 4 ounces of sherry

Instructions:

  • Using the canned chicken broth onion, carrots, celery and ham, make a broth
  • Brush the turkey with the bacon fat and then brown in a pot
  • Add the broth and the remaining ingredients and let them cook for 1 hour or until tender
  • Remove the bird pieces and blend the vegetables with liquid using a blender
  • Add the broth and the contents to the pan that you used to brown the bird and let them simmer for 3 minutes or so
  • Add water if there is not enough broth
  • Add sherry to the sauce; place the bird on a platter and pour sauce over the meat. Enjoy!

Italian Wild Turkey

Cooking Time: 2-3 hours

Ingredients:

  • 1 wild turkey meat for six people
  • 1 medium onion
  • 2 green peppers
  • 1/2 tbsp garlic powder
  • 1 tbsp. sesame oil
  • 1 tbsp. salt
  • 1/4 cup olive oil
  • 1 jar good spaghetti sauce
  • One half cup parmesan cheese
  • 1 tbsp. sugar
  • 1 tbsp. oregano

Instructions:

  • Brown the turkey pieces in a very gentle matter
  • Mix the seasonings, parmesan cheese, spaghetti sauce and vegetables in a pot
  • Add wild turkey with deglazed juices
  • Simmer until done adding water (if necessary)
  • Serve with wild rice. Enjoy!
